Ditalini Pasta Soup

Simple and hearty soup that is enjoyed by adults and children alike.

 

Ingredients   
1 cup pasta, Dilatini, or any other very small pasta
3/4 cup quinoa
1 garlic clove, chopped
1/2 small onion, cut into cubes
1 cup carrots, diced
1 cup peas
1 cup potatoes, cut into small cubes
4 tablespoons olive oil
8 cups chicken stock
1/2 cup parmesan cheese, Parmaginao Reggiano
salt and pepper to taste

 

cooking method      
1. In a large pot, cook the onion and garlic in the olive oil over medium heat for 5 minutes or until soft.
2. Add the stock and quinoa and bring to simmer for 15 min.
3. Add the peas, carrots, potatoes and pasta. Season with salt and pepper to taste.
4. Cook for 15 min over low heat until the pasta and potatoes are cooked and let it rest for 10 min before serving it.
5. Serve with cheese.
